Pita
(Makes 1)
2.5 sticks unsalted butter (room temperature) mixed with some olive oil
1.5-1.75 cups warm water
1/2 tsp salt
3 cups all-purpose flour
2 tsp olive oil
Knead flour, salt, water, and oil together with some working flour until smooth and somewhat spongy.
Separate dough into two balls, cover with oil, allow to rest 10-15 minutes.
Stretch dough balls and cover with the butter+oil mixture, then cut into approximately 16 pieces.
Stack the pieces of each dough ball and chill for 20-30 minutes.
Butter the bottom of a pan.
Stretch out one stack of laminated dough and lay across the pan.
